Broccoli Cheddar Chicken
This copycat of the Cracker Barrel classic will be sure to make everyone at your house happy with it's cheesy sauce and cracker topping!

Preheat oven to 350 degrees and lightly grease a 9x13 casserole dish.Season chicken with salt, pepper, onion powder, garlic powder, and 1/2 tsp paprika and place in prepared dish. -
Step 2
In a medium bowl, mix together milk, soup, 1/2 tsp paprika, sour cream, and cheddar cheese.Pour half of cheese mixture over chicken.Scatter broccoli pieces over cheese mixture.Top with Ritz cracker pieces and remaining cheese mixture.(I put the crushed crackers down THEN poured the remaining cheese mixture over the top - the sauce and cracker kinda thicken up together but if you want a crispy topping just use the crackers on very top mixed with a little melted butter) -
Step 3
Place in oven and bake for 45 minutes. (I look for small chicken breasts for this recipe. Larger ones I cut in half horizontally. You will need to increase cooking time by at least 10 minutes if your chicken breasts are larger and you do not cut them into 2 thinner pieces.)

I made just a very few tweaks to the original recipe from Spicy Southern Kitchen just to suit my tastes. This one is a quick and easy comfort classic that never gets old.
