Breakfast Sausage & Potato Hash With A Kick!

This is a delicious hearty breakfast hash but I love to throw this skillet hash together for dinner when I'm short on time or ideas. And I love to kick it up with a savory jam from Jammin Jams, too!

    In a large non-stick pan over medium heat, add the sausage and bacon pieces with a tablespoon of olive oil to begin cooking, crumbling the sausage patties as they cook.

    Add the diced potatoes, onion and black beans and stir together until blended and hot, then add the diced tomatoes until softened.

    Add 2-3 spoonsful of jam to the mixture and stir until the hash is completely blended. You can slide your hash to the side and scramble in or fry up some eggs and stir them in or you fry or scramble your eggs in another skillet and serve them over top of your hash.

This is a very easy and versatile recipe and can be customized to use whatever you have on hand, it's a great way to use up any veggies that might be nearing the end of their days, too. I found this recipe in Jammin Jams cookbook called Cooking With Jammin Jams. I only slightly altered the recipe and Janice has given me permission to share it with you!
