Beach Bread

Beach bread is a quick, easy, flavorful appetizer perfect for a lazy day by the pool or a little movie night snack. The tomatoes and blue cheese dressing give it a fresh and bright flavor and it only takes about 15 minutes to assemble and bake. And about that blue cheese, if you are REALLY against it, you can use ranch but I highly suggest you give it a try in this recipe. The amount used is not overpowering but just gives it an added depth of flavor that ranch wouldn't.

  1. Step 1

    Preheat oven to 425°F. Line a large baking sheet with parchment paper or foil and set aside.

    Split the French baguette in half and spread each half with 3- tablespoons of butter and sprinkle evenly with garlic powder.

  2. Step 2

    Spread the blue cheese dressing evenly on each half and add the diced tomato on top.

    Cover the bread with the mozzarella cheese and sprinkle with parsley.

    Season with salt and pepper.

  3. Step 3

    Bake for 10-15 minutes until cheese is melted and edges are golden and crisp.

    Slice and serve.

I found this recipe from Cookies and Cups when I was taking a little staycation and break from filming and editing; well that didn't happen, LOL I got off on a bunny trail looking for some quick and easy snack foods that I could make for dinners instead of cooking full meals on my week off and the name of this recipe immediately made me click, and I'm so glad I did.
