BBQ Chicken Loaded Waffle Fries
I've been making all kinds of "loaded fries" for years, they're a great way to use up the last bit of left over taco meat, sloppy joe filling, pulled pork, or any kind of meat you have hanging out in the fridge. But I never thought about presenting them in a big cast iron skillet and I just love what this one simple change does to elevate this little leftover makeover to tailgate party approved! All manner of toppings are just the beautiful and delicious icing on the cake, so to speak! Get creative and make this one uniquely your own whether you want a little mid-night snack, fancy looking (but easy to make) appetizer, or a treat to enjoy during the game, or just for no reason at all!

Prepare the frozen waffle fries according to the package instructions. I like to spray mine with some olive oil and season with the Weber's Smokey Mesquite seasoning before baking. Then place the cooked fried in a 10 -12 inch cast iron skillet. Turn oven down to 350 degrees.

Place drained chicken in a medium bowl and season with Weber's Smokey Mesquite seasoning to taste, then top the fries with the chicken and bacon bits, then drizzle with barbecue sauce. Top with shredded cheese. Place the skillet in the oven and cook for 15 minutes, or until the cheese is melted.

Remove from the oven and top with sour cream, and thin sliced green onions, and any other toppings you love. Enjoy immediately.
