Basil Pesto Tomato Grilled Cheese Sandwich

This sandwich was completely inspired when a good friend (she's like my second momma) gave me some homegrown tomatoes. The measurements in this recipe should be enough to make two sandwiches, because you won't want to share yours! It's just perfect, that is all I have to say, lol!

  1. Step 1

    In a medium skillet melt 1 tablespoon of butter.

    Spread one slice of bread with one tablespoon of pesto and place it in your skillet, moving it around to coat in the butter. I highly recommend the Barilla Creamy Genovese Pesto, it's such a smooth flavor with just a mild tasting basil.
     
    Building on the top of your bread, lay down about a 1/4 cup of the cheese and top the cheese with sliced tomatoes, I like to season mine with black pepper. Then add another 1/4 cup of cheese. Spread another piece of bread with 1 tablespoon of the pesto and top off your sandwich. By this time the sandwich is probably good and toasty on the first side.
     
    Remove it to a plate and melt another tablespoon of butter in the skillet then add your sandwich and toast up the second side to your liking.
     
    Remove it to a cutting board, slice into and enjoy! 

Note

If you're feeling extra...instead of melting the butter in the skillet - spread softened butter on the outside of each piece of bread and sprinkle a little garlic powder on it before you toast it up. It's pretty dang good!
