Baked Crack Chicken

Everything we love; bacon, ranch, and cheese atop juicy chicken breasts! At first glance it seems like a lot of ingredients but it's mostly seasonings that you probably have on hand, and they are what make this dish so delicious. A perfect quick and easy chicken dinner for any night of the week, plus it's low carb and keto-friendly.

  1. Step 1

    Preheat oven to 4o0 degrees while frying bacon in a skillet on the stovetop until crispy. Remove bacon from skillet DO NOT get rid of the bacon grease. Add oil to bacon grease left in skillet and let it heat up. 

    Season chicken with salt, pepper, garlic powder, and paprika (measurements for chicken) and add to the hot skillet, browning it up about 3 minutes on each side. Add in the butter while you're browning the chicken (you don't have to cook it completely, it will be baking in the oven)

  2. Step 2

    Remove the chicken from the skillet and place in a 9x13 greased baking dish and set aside.

    In a small bowl combine cream cheese, garlic powder, onion powder (for cream cheese mixture), ranch seasoning, and shredded cheddar cheese and mix until thoroughly combined.

    Top each chicken breast with 2 tablespoons of the cream cheese mixture. Spread to coat each chicken breast. Then top the cream cheese mixture with the bacon. Finally sprinkle a little more shredded cheese (I really like mozzarella or Monterey Jack) over the chicken breasts.

    Bake, uncovered, for 15 minutes, or until chicken is cooked through and cheese is melted and lightly browned.
