Apple Cider Doughnuts
Cinnamon sugar coated and baked – not fried, these yummy apple cider donuts will become a fall favorite sweet treat in your house! Quick and easy, they really are - I had my doubts, too, these fall-inspired donuts are the perfect way to celebrate autumn!

Add apple cider to small saucepan and bring to boil over medium high heat and cook until reduced to ¼ cup, about 10 minutes then cool completely

Preheat oven to 350 degrees, coat donut pans with non-stick cooking spray

In a large bowl, beat sugar and butter until combined, add eggs and mix until well combined. Add buttermilk and reduced apple cider and mix until well combined

In a medium bowl, whisk together flour, cinnamon and pumpkin pie spice. Add dry ingredients to wet ingredients and stir just until combined

Fill donut pan about ½ full (It's helpful to use a piping bag)

Bake for 10-12 minutes or until lightly browned and cool on wire rack for 5 minutes then remove from pan

Combine cinnamon sugar coating and/or glaze in a medium bowl

Melt butter in microwave safe bowl and cool slightly, then dip donuts in cooled butter and immediately coat both sides with cinnamon sugar mixture and set on a wire rack

This is adapted from a recipe I found on Hip Mamas Place and I am so proud that I stepped out of my comfort zone and gave these a try! They really were not as hard to make as I expected and the payoff was well worth it.
