Almost Payday Chicken Salad
This little recipe caught my eye one day because of the simple, inexpensive ingredients and the rave reviews the recipe writer said she receives every time she takes this to a church fellowship. So I had to give it a try and she was right, it's really good and you can stretch your food dollar a long way with this one, too!

Mix all the ingredients together and add a some pickle juice to spice it up. Sprinkle some paprika to make it look fancy. Refrigerate but not necessary if you are eating it immediately. You may need to add a little more mayo after refrigerating.
Note
I found this recipe at Blessed Beyond A Doubt and she said she has yet to ever have anyone question the secret ingredient - the saltines, LOL. She also said she uses this recipe with tuna but used the unsalted crackers for it. And if you prefer sweet pickles in your chicken salad feel free to substitute them in for the dill pickles chunks.
